Company Salad

I love salads – pasta, fruit, taco and good old house.  At a restaurant we enjoy, they have a salad called the Company Salad.  I usually don’t pick ranch for my dressing, but this comes with it and it’s yummy. I have recreated this at home – you can, too, since it’s super simple.

Company Salad

Lettuce Mix – a little iceberg and some green leaf or romaine.

Parmesan Cheese – fresh or from the shaker – they both work (I prefer fresh, though)

Cucumber – sliced and quartered

Cherry tomatoes  – a handful

Red onion – just a few cut up slices (optional)

Croutons

Ranch dressing

Mix everything but the parmesan and ranch dressing and chill.  Just before serving, add enough ranch to lightly coat salad. Throw in parmesan cheese and toss.  Serve and enjoy!
